Breakfast Banana Split # 2
  • 2 small bananas
  • 8 oz. non-fat or low-fat vanilla yogurt
  • 2 cups unsweetened frozen blueberries
  • 1 tsp. granulated sugar
  • 2 Tbsp. water
  • 1/2 cup chopped walnuts
    Heat frozen blueberries, sugar and water in a small saucepan over medium high heat. Bring to a boil, then reduce heat and allow to simmer until the blueberry sauce thickens, about five minutes. Slice the bananas in half lengthwise and place each one in a bowl. Top each banana with 4 ounces of vanilla yogurt. Spoon the blueberry sauce over the vanilla yogurt. Top with chopped walnuts.
